Recipe for frittelle: how to prepare them like a true Venetian
Searching around the web, we acknowledge that the word "frittella" is used to indicate something different from what we indicate.
Venetian style frittelle in fact are fried sweets that are eaten only during a particular time of the year. They are in fact the symbol of Carnival and we wait all year long to eat them.
In this article we are going to show how to prepare them and you will see that it is actually simple!
Frittelle recipe: the list of ingredients you need
Here follows the list of ingredients:
- 2 eggs
- milk (250 ml)
- flour (600 g)
- sugar (2/3 teaspoons)
- lemon zest
- warm water (about 100 ml)
- raisins and pine nuts
- yeast mixture
- a pinch of salt.
How to prepare the frittelle recipe
The first thing to do is to soak the raisins in warm water.
Then, crumble the yeast and add the warm water. Stir well till the yeast has dissolved.
Put in a bowl the flour, the sugar and the lemon zest, stir and then add the yeast and start mixing. You can add the rum at this point.
In a separate bowl, beat the eggs with a pinch of salt. When you have done, gently put the eggs in the other bowl. Start adding the milk, being careful to add it little by little.
Your dough should end up fairly consistent. This is the moment to squeeze the raisins and add them to the rest of the mixture.
Cover the bowl and let your dough rise for about two hours. It will be ready when the dough has doubled its volume.
In a frying pan, heat some sunflower oil (or peanut oil) and, when it is well heated, take small amounts of dough (about half a tablespoon), and deep fry them.
It would be helpful for you to use an ice cream scoop. In this case you know the exact quantity of dough to dive into the boiling oil.
Before you take your frittelle from the oil make sure they have become golden brown on both sides. Drain them with a slotted spoon and let them dry on a sheet of paper towel.
Add some granulated sugar on the frittelle while they are still hot.
